History and traceability

The story

The name Serinen refers to a notion of brotherhood inherent to Gayo culture: everyone looks out for each other, and collective work is based on mutual aid. A name that echoes the way Kenawat's producers collaborate on coffee cultivation and processing.

Produced in Kenawat, within the Gayo terroir, in northern Sumatra, this lot combines the Typica, Catimor, and Timor Hybrid varieties. It brings together coffees from Fahman Yoga's farm and neighboring producers, cultivated through agroforestry under the shade of various tree species.

Serinen is processed using an anaerobic washed method. After harvesting and cleaning ripe cherries, they are pulped and then placed for seven days in an airtight tank to ferment without oxygen. The remaining mucilage is then removed before drying the parchment coffee to a moisture content of 10 to 12%. Finally, the beans are dry milled.

This lot is offered by Adena and locally spearheaded by Fahman Yoga, a native of Kenawat. After nearly three decades of conflict, many farms had been abandoned, and the village long remained outside the purchasing channels. By collecting and processing coffees alongside local producers, Adena and Fahman contribute to restoring value to this origin and creating new opportunities for the community, particularly for the younger generations.

Fahman Yoga is a former footballer from Sumatra, Indonesia. After his sporting career, he returned to his native village, Kanawat, in the Gayo region of Sumatra. A village that had long been marred by armed conflicts over independence in the north of the island. His aim in taking over the family farm was to add value to the coffees from this region of Indonesia. To this end, he produces his own coffee and also collects that of neighboring producers.

In association with Adena Café, Fahman Yoga works on many innovative coffees, with no added yeast, which we are proud to offer you for the first time this year (2024). With Adena Coffee, they were the first, in 2023, to win the Indonesian Cup of Excellence with a wet hulled process coffee, adapted to the extreme humidity of this part of the world.
