A second-generation producer, Olman Valladarez is today a recognized figure in the specialty coffee scene in Nicaragua. After taking over the family farm, he structured his project around a progressive improvement in quality and an increased control over the value chain, from production to post-harvest processing.
Located in Dipilto, in the Nueva Segovia region, Finca Buenos Aires lies at the heart of his project. The construction of the Cafetalera Buenos Aires washing and drying station marked a major turning point, allowing Olman Valladarez to process and export his coffees directly, while ensuring precise process management and strong quality consistency.
His work is regularly recognized at the highest level. Olman Valladarez has participated more than 40 times in the Cup of Excellence, earning five first-place awards, and has also stood out in the Nicaraguan competition “The Best of Maragos”, dedicated to varieties such as Maragogype, Maracaturra and Pacamara.
This lot is produced from the Caturra variety, an arabica known for its balance and its ability to clearly express terroir when grown and processed with precision.
The Natural Micro Oxygenation process used for this coffee reflects the producer’s rigorous approach to fermentation. This method relies on careful management of oxygen exchange during natural fermentation, allowing for controlled aromatic development while preserving balance, sweetness and structure.
Today, Olman Valladarez’s commitment is part of an eco-responsible approach, with particular attention paid to reducing the use of chemical inputs and preserving forests and water resources, in order to combine cup excellence with long-term sustainability.
